It’s been stinking hot here in Adelaide the last few days, with no rest in sight this week. Thought it was time to start making my own Icypoles as our consumption of sugar-loaded store bought ones was getting redick. Plus, those little plastic ends that the kids cot off and leave lying around were killing me.
Enter… DIY icypole moulds! Huzzah! Available at www.neat2eat.com.au, they are simply to use and re-useable! The best!
Flavour options are endless, I went with strawberry first up as I had a ounnett in the fridge that needed to be used. Here’s my simple recipe, I’ll be trying out some others in the coming days…
INGREDIENTS
2 tablespoons sugar/equivalent sweetener (I used coconut sugar)
1 punnet strawberries, sliced
2 tablespoons lemon juice
4 cups water
Mint leaves (optional)
METHOD
1. In a saucepan, heat sugar/sweetener and strawberries with a dash of water, on medium low until a sauce is formed (about 5-10 minutes).
2. Place warm strawberry sauce and lemon juice in NutriBullet/blender until smooth. Add mint leaves if adding in.
3. Combine with water in large bowl.
4. Pour liquid into icypole moulds or freezer pop bags.
4. Freeze until solid.
Makes 12 icypoles.
